Dear SooN Cooks of the Internet,

I eat a lot of salad.  My favorite is Caesar — no question. The saltiness from the anchovies and the acidity from the lemons is a fusion that I’ll never get tired of.

Kale on the other hand? This marriage happened by accident one evening when I was SooN ENTERTAINING in 2008.  I had forgotten to grab romaine lettuce and didn’t realize it until minutes before dinner was going to be served.  A bunch of Lacinato Kale was all I had on hand.  So I gave it a go and have literally never looked back.  In fact, I love it so much that in our house — if it’s Caesar, it’s Kale!

Ingredients

  • 1/2 cup Caesar Dressing
  • 1/4 cup Microplaned Parmesan cheese
  • 1/2 cup Croutons
  • 4-6 White Anchovies
  • 1 bunch Lacinato Kale
  • 2 package Baby Kale
  • 1 tsp lemon-pepper
  • 1 tsp garlic-salt

Other Critical Information

You can use any type of kale, these two varieties are my favorite.

Choose your SooN COOKING™ Adventure

SooN COOKING Original

 

#1: Prep Ingredients

Separate the Lacinato kale leaves from stems and wash.  Spin dry and then shred into bite size portions. Crush the croutons up in the mortar & pestle until it transforms into crouton crumbles.

 

#2: Mix Ingredients

Empty contents of baby Kale package into the large bowl. Add the Lacinato kale.  Add the Caesar Dressing and distribute evenly in the kale.

 

#3: Garnish and Serve

Top the salad off with the parmesan and crouton crumbles. Distribute the anchovies evenly and finish with the lemon-pepper and garlic-salt.
