New to SooN Cooking?

No problem! Some quick background on the concept: I love to cook and realized that I often had to adjust my meal plan to accomodate for for my friends and family with dietary requirements when they joined me for a meal.  More often than not, I didn’t know how to modify my recipe to address their dietary needs which launched me into some deep research and left me with a lot of fear, uncertainty and doubt that I was preparing the recipe the right way for my guest.  A concept that I now call Meal Planning FUD [fear, uncertainty and doubt]. To combat Meal Planning FUD each of my recipes has eight variations which covers everything from vegetarian to Kosher to gluten-free so that you can cut the Meal Planning FUD out of your life and feel comfortable serving the recipe to a variety of guests. Critical Information

Serves: 6-8 | Prep: 15 minutes | Cook: 10 minutes | Total Time: 25 minutes

Ingredients

  • 3-4 Large Avocados
  • 1/2 Shallot diced
  • 4-6 Garlic cloves minced
  • 1/4 Jalapeno diced
  • 1 1/2 Limes juiced
  • 2 TBS Kosher Salt

Original

 

#1: Prep the Ingredients

Use the knife and cutting board to prep the shallot, garlic and jalapeno and set aside. Juice the limes and set aside. Cut each avocado in half, remove the pit and skin placing the avocado flesh/meat into the mixing bowl.

 

#2: Make the Base

Use the Avocado masher to breakup the avocado into a creamy but chunky base. Add the salt, shallot, garlic and lime juice and distribute evenly. Stir with a spoon and whip until creamy.

 

#3: Finish and Serve

Taste and finish to your preference — balancing the over/under.

If feel you are lacking salt, acid or spice — add 1/2 the amount you think you should add and iterate until you feel comfortable with the end product.

If you have over done the salt, acid or spice — try balancing with one of the other two ingredients.

Serve with Classic Salsa and chips or to finish Pork Carnitas, Steak Tacos or Eggs Santa Fe.

Make sure to use Kosher certified products when serving Guacamole to someone who keeps Kosher.

Make sure to use Halal certified products when serving when serving Guacamole to someone who keeps Halal.

Celiac

Make sure none of the ingredients used to make the Guacamole have gluten in them.

for One

Simply pair down the ingredients and you will have a single serving of this delicious snack:

  • 1/2 large avocados
  • 2 slices of shallot diced
  • 1 garlic clove minced
  • 1 slice jalapeno diced
  • 1/4 lime juiced
  • 1/4 tsp Kosher salt

 Follow the directions in the Original recipe to complete.

 

for Kids

I’ll make a separate serving without the jalepeño for my kids to enjoy. This doubles as a solid strategy for separating what is “yours” from what is “mine”.

The credit goes to my husband, Jason for this recipe. Before I met him, I was throwing all kinds of things in my guac such as cilantro, tomatoes and hot sauce. I was skeptical the first time he made it because he omitted so many of my standard ingredients. But I quickly learned that keeping things simple can truly pay off.
